Summary Of Position
As a Pastry Sous Chef at The Maybourne Beverly Hills, you will hold a key leadership position in our distinguished culinary team. Your role will involve crafting and delivering exquisite pastries, desserts, and confections that leave a lasting impression on our esteemed guests.
Roles And Responsibilities
Collaborate with the Executive Pastry Chef to design and execute a diverse range of pastries, desserts, and baked goods, keeping in line with our luxury standards.
Assist in supervising the pastry kitchen team, ensuring that all pastry preparations are of the highest quality and that standards are consistently met.
Maintain meticulous attention to detail in all aspects of pastry preparation, presentation, and taste, ensuring that the final products exceed guest expectations.
Contribute to the development and enhancement of pastry recipes, taking into account current culinary trends and guest preferences.
Oversee the procurement, storage, and efficient use of pastry ingredients and supplies, minimizing waste and maximizing freshness.
Enforce and maintain a safe and clean kitchen environment, adhering to all health and safety regulations.
Mentor and train pastry team members, fostering a culture of continuous learning and professional growth.
Assist in creating visually appealing pastry menus, complementing the overall culinary experience at The Maybourne Beverly Hills.
Accommodate special requests or dietary preferences, ensuring their satisfaction with dessert offerings.
Qualifications
Culinary degree or certification in Pastry Arts is preferred.
A minimum of 2-3 of experience in pastry and dessert preparation, including experience in a luxury hotel or fine dining setting.
Proficiency in a wide range of pastry techniques and dessert styles.
Strong leadership, team management, and communication skills.
Knowledge of food safety standards and sanitation practices.
Ability to adapt and create innovative pastry concepts in line with evolving culinary trends
Physical Requirements
Position regularly involves lifting food cases and materials weighing up to 70 lbs. Pushing and pulling carts is required.
Regular bending to lift items and supplies. Some kneeling.
To complete a task, may be stationary for short periods of time.
Ability to go up and down stairs between the ground level and lobby level.
Inside: Working in assigned kitchen areas. May be exposed to hot temperatures, water, steam, and smoke.
Outside special events. Summer temperatures outside can get above 95 degrees for 5 months of the year. For 2-3 months of the year, low temperature can get as low as 30 degrees.
Active listening required, Hearing equipment, timers, etc.
Check quality and portions of food. Visual cooking cues and surroundings.
Reading recipe cards, procedures, safety information and food labels.
Basic kitchen cleaning supplies and sanitizers.
Hair restraint/hat, gloves, apron, chef’s jacket, closed toed shoes.
Communicate with kitchen staff and service team.
Must be able to obtain any required food handing or sanitation certifications required by local or state agencies.
